The menu changes with the seasons and with what's landing on the Welsh coast. Nothing showy, nothing forced, just cooking done properly, in a room that's built for it.

Beef and lamb from farms in the Vale of Glamorgan. Fish landed on the Welsh coast that morning. Caerphilly from down the road. Herbs and edible flowers from our own garden when the weather obliges.
